Cinchona is sometimes called red bark and is often used in very small quantities as a bitter flavouring in tonic water and alcoholic beverages. Approximately 64g of cinchona produces 14 litres of tonic syrup or 70 litres of tonic water! Tess Posthumus has great recipes!
WARNING:
Cinchona alkaloids, including quinine, can be toxic in high doses and possibly lead to cinchonism. The Australia New Zealand Food Standards Code specifies a maximum quinine level of 100mg/kg for tonic beverages. Avoid if pregnant or lactating.
Cinchona bark contains quinine, which was historically used to treat malaria and even the common cold and mild fevers.
